To keep it a buck my grill game is on “rookie” but I’m All Madden with the pan sear...

...I’m a rare/medium rare kinda n*gga.

How should I go about it?

Finish it off in the oven too or nah?

I made one a few months back, cooked it indirect heat in an smoker and seared it after it was the temp I wanted to serve it at, it came out pretty good. Enjoy!

Looks great OP.

I usually just go with salt and pepper and add my buttery sauce as it cooks.

How much did that cut cost you?

I might try that next month. n*gga maxed out on my red meat quota this month after Texas de Brazil.

Medium rare the way to go
Reverse sear next time
Finish it on the grill indirect heat until you reach that medium rare internal temp

Looks like it turned out great. As others said, cook it indirect and then sear it once you're close to the desired temp. I also definitely recommend an instant thermometer to take away some of the guess work

Any quality steak just needs salt and pepper while it gets room temp before cooking. After it’s cooked let it rest 5-7 min with a slice of herb butter on top and you’re good to go. Let the meat taste like meat (pause) that’s why you paid so much for it. All that sauce and 15 seasoning is for the chuck steaks ect...

sous vide for 75min then sear on high in a cast iron skillet 2min each side

Back off all the seasoning. Salt pepper garlic all you need. A lot of that will dry out the cut. Otherwise final outcome looked solid. Eventually you’ll elevate from rookie to boss on the grill. Try to move from gas grill to smoker as soon as possible. Smoking/indirect grilling is the way to go. You can convert a gas grill to do indirect heating + smoking by using a smoke tube for pellets.
This was the ribs I did last weekend
