BEER CAN CHICKEN
1 chicken (3-4 lbs)
¼ cup Cajun Spice
1 can of beer (12 oz.)
2 tbsp. 30 mL butter
1/4 teaspoon crushed garlic
½ cup of your favorite gourmet-style BBQ sauce

Directions:

Preheat the grill to medium-high heat.

Wash the chicken inside and out with cold water and pat dry with paper toweling.

Rub the chicken inside and out with Cajun Spice, rubbing the seasoning into the meat so it adheres.

Open the beer can and pour about ¼ of the liquid into a small saucepan and set saucepan aside.

Place the opened can onto the center of the grill. Place the seasoned chicken over the can so that the can is in the cavity of the bird and the bird is standing upright.

Tuck the wing tips in behind the chicken, ensuring they are secure.

Close the lid and roast for 1-1½ hours, about 20 minutes per pound.
Baste liberally with BBQ sauce throughout the last half of cooking time.

To check for doneness, insert a meat thermometer into the thigh. It should read 180°F.

Meanwhile, prepare the basting sauce. Bring reserved beer in saucepan to a boil over high heat. Reduce heat to medium-low and simmer for 1-2 minutes. Add butter and stir until melted. Stir in crushed garlic and heat, stirring well, until incorporated.

Remove from heat and set aside until needed.

Carefully remove the chicken from the grill. Allow to cool slightly and remove chicken from roaster very carefully with tongs and a large fork.

Chicken will be very hot and there will be steam.

Cut chicken into quarters and serve immediately with extra basting sauce on the side.imageimage

Turkey or Pork Bacon Wrapped Thighs with Jack Daniels
Ingredients:

1 regular cedar plank, soaked in water
8 boneless, skinless chicken thighs
2 tbsp. Bone Dust BBQ Seasoning
8 slices thick-sliced bacon
2 tbsp. Jack Daniel’s Whiskey
½ cup of your favorite gourmet-style BBQ sauce

Directions:

Preheat grill to medium heat.

Evenly coat chicken thighs with Bone Dust BBQ Seasoning.

Tightly roll the thighs up like jelly rolls, starting at the narrow end of each thigh.

Take one slice of bacon and spread it out onto a flat work surface.

Place one chicken thigh at one end on the bacon and wrap the bacon tightly around the chicken thigh.

Repeat with remaining thighs.

Evenly space bacon-wrapped chicken thighs on plank. Place plank on grill and close lid

Plank bake chicken for 15 to 30 minutes, checking occasionally to ensure that the plank is not on fire. Meanwhile, combine the Jack Daniel’s with the barbecue sauce. Baste bacon-wrapped chicken thighs liberally and evenly with Jack Daniel’s-flavored barbecue sauce for 10 to 15 minutes more so that the meat gets sticky and cooks through.

Remove from grill and serve immediately.

Peanut Butter Pie
Ingredients:

1 chocolate graham cracker or cookie pie crust
8 oz. cream cheese
1 cup creamy peanut butter
½ cup granulated sugar
1 teaspoon pure vanilla extract
8 oz. frozen whipped topping, thawed
whipped cream, chocolate syrup, and grated chocolate; optional garnishes

With an electric mixer, beat cream cheese and sugar until smooth. Blend in peanut butter and vanilla. Fold in whipped topping. Spoon mixture into prepared pie crust. Refrigerate for at least 4 hours. Garnish with whipped cream and chocolate syrup, with a sprinkling of grated chocolate. Keep refrigerated.

Deep Fried Oreos
Ingredients:

2 quarts vegetable oil for frying
1 large egg
1 cup milk
2 teaspoons vegetable oil
1 cup pancake mix
1 (18 ounce) package cream-filled chocolate sandwich cookies (such as Oreo®)
powder sugar (optional)

Directions

Heat oil in deep-fryer to 375 degrees F (190 degrees C).

Whisk together the egg, milk, and 2 teaspoons of vegetable oil in a bowl until smooth. Stir in the pancake mix until no dry lumps remain.

Dip the cookies into the batter one at a time, and carefully place into the hot frying oil. Fry only 4 or 5 at a time to avoid overcrowding the deep fryer.

Cook until the cookies are golden-brown, about 2 minutes. Drain on a paper towel-lined plate before serving. Can sprinkle powder sugar on top if desired.

Friendship Casserole makes 2
Ingredients:

2 - lbs ground beef
1 - 48 oz jar spaghetti sauce
2 – tablespoons sugar
1 (16 oz) - pkg medium egg noodles
1/2 - cup margarine or butter
1/2 - tsp onion salt (or onion powder)
1/2 - tsp garlic salt (or garlic powder)
1/2 - cup grated Parmesan cheese
1 - 12 oz pkg shredded mozzarella cheese

Directions:

Preheat oven to 350° Brown meat and drain fat. Add spaghetti sauce and sugar to meat; simmer 20 minutes. Cook noodles as directed (AL dente); drain and toss with margarine, salts and Parmesan cheese. Spray two 9x13 pans with non-stick spray. In both pans layer half the sauce, all the noodles, rest of sauce; top with mozzarella cheese. Cover with foil; bake 45 minutes.

Easy Cheesy Breadsticks

Ingredients:

1 (10 ounce) cans prepared pizza crust
1 tablespoon butter, melted
1/2 cup provolone cheese, shredded
1 tablespoon parmesan cheese
1 tablespoon dried basil
1/4 teaspoon garlic salt

Directions:

Preheat oven to 425.
Unroll pizza dough onto a greased cookie sheet or Lg. Bar Stone, and brush with butter.
Sprinkle cheeses and spices evenly over the dough.
With a pizza cutter, cut dough lengthwise into 12 long strips. Then cut those in half to make 24 strips.
Do not seperate strips.
Bake for 10-12 minutes or until light golden brown.
Recut along each strip and remove from cooking sheet.
Serve sticks warm with marinara sauce

Crock Pot or Oven:
Chicken Cheesy Tater Tot Casserole
Ingredients

1 (32 oz.) bag frozen tater tots
1 (3 oz.)bag bacon pieces
1 pound boneless, skinless chicken brea$ts, diced
2 cups shredded cheddar cheese
3/4 cup milk
salt & pepper, to taste

Directions

1 Spray slow cooker with nonstick cooking spray. Layer half of the frozen tater tots on the bottom of the slow cooker. Sprinkle with 1/3 of the bacon pieces. Now top with 1/3 of the shredded cheese. Add diced chicken on top. Season with salt & pepper.


2 Now add 1/3 of the bacon pieces and another 1/3 of shredded cheese. Put the rest of the frozen tater tots on top. Finish with the remaining 1/3 cheddar cheese and remaining 1/3 of bacon pieces. Pour 3/4 cup milk all over the top.

3 Cover and cook on low about 4-6 hours.

Please note: Some slow cookers run at different temperatures. If you are using an older slow cooker (older than about 6 years old), your cooking time may take longer. Newer models run a bit hotter so keep an eye on this around the 4 hour mark. You want to make sure the chicken is cooked thoroughly (to 165F degrees).

4 Cook's Note: To make this in the oven, spray a 9x13 baking dish with nonstick spray.
Layer ingredients into baking dish. Cover and bake at 350F degrees for about an hour.

Homemade Vitamin Water
1) The classical : lemon/cucumber:
Mix in a pitcher: 10 cups of water + 1 cucumber and a lemon, thinly sliced + 1/4 cup fresh finely chopped basil leaf + 1/3 of finely chopped fresh mint leaves. Leave in the refrigerator overnight before serving.

2) The granite : Strawberry/Lime
Mix in a pitcher : 10 cups of water + 6 strawberries and one thinly sliced lime + 12 finely chopped fresh mint leaves. Leave in the refrigerator overnight before serving.

3) The digestive : Fennel/citrus
First: infuse 1 to 3 grams of dried and crushed fennel in 150 ml of boiling water for 5-10 minutes. Allow to cool.
Mix in a pitcher: 10 cups of water + lemon juice (put the leftover lemon in the mix) + a small thinly sliced orange + 12 fresh chopped mint leaves + the infusion of fennel seeds. Leave in refrigerator overnight before serving.
4) The antiOX : Blackberry/Sage
Note that a part from the berries, sage leafs is the herb that has the highest antioxidant content.
Mix in a pitcher : 10 cups of water + 1 cup of blackberries that have been very slightly crushed + 3-4 sage leaves. Leave in refrigerator overnight before serving.

5) WATERmelon : watermelon/Rosemary
Mix in a pitcher : 10 cups of water + 1 cup of watermelon cut into cubes + 2 rosemary stems. Leave in refrigerator overnight before serving.

6) The exotic : Pineapple/Mint
Mix in a pitcher : 10 cups of water + 1 cup of pineapple cut into cubes + 12 fresh mint leaves finely chopped. Leave in the refrigerator overnight before serving.

7) The traditional : Appel/cinnamon
Mix in a pitcher : 10 cups of water + 1 cup of apple cut into cubes + 2 cinnamon sticks + 2 teaspoon of ground cinnamon. Leave in the refrigerator overnight before serving.
8.) The zingibir : Ginger/tea
In advance: heat 1 teaspoon of ginger in two cups of tea, let it cool down.

Mix in a pitcher: 10 cups of water with two cups of the ginger tea + 4-5 pieces of fresh ginger cut into cubes. Leave in the refrigerator overnight before serving.

Brownie Caramel Cheesecake
Ingredients:

1 (9 ounce) package brownie mix
1 egg
1 tablespoon cold water
1 (14 ounce) package individually wrapped caramels, unwrapped
1 (5 ounce) can evaporated milk
2 (8 ounce) packages cream cheese, softened
1/2 cup white sugar
1 teaspoon vanilla extract
2 eggs
1 cup chocolate fudge topping

Directions:

Preheat oven to 350 degrees F (175 degrees C). Grease the bottom of a 9 inch springform pan.

In a small bowl, mix together brownie mix, 1 egg and water. Spread into the greased pan. Bake for 25 minutes.
Melt the caramels with the evaporated milk over low heat in a heavy saucepan. Stir often, and heat until mixture has a smooth consistency. Reserve 1/3 cup of this caramel mixture, and pour the remainder over the warm, baked brownie crust.

In a large bowl, beat the cream cheese, sugar and vanilla with an electric mixer until smooth. Add eggs one at a time, beating well after each addition. Pour cream cheese mixture over caramel mixture.

Bake cheesecake for 40 minutes. Chill in pan. When cake is thoroughly chilled, loosen by running a knife around the edge, and then remove the rim of the pan. Heat reserved caramel mixture, and spoon over cheesecake. Drizzle with the chocolate topping.

Honey Garlic Porkchops
Ingredients:

1 cup ketchup
1/3 cup honey
¼ cup soy sauce
2 garlic cloves (minced)
1 1/2lbs boneless pork chops (6 4 oz portions)
salt and pepper

Directions:

In a medium bowl stir together ketchup, honey, soy sauce and garlic. Set aside.

Lightly season the pork chops on both sides with salt and pepper. Brush each chop with the sauce to coat.

Grease the grill grates of an outdoor grill and heat the grill to medium-high heat. Place pork chops onto the grill, and cook (while basting with the sauce often) for about 5 minutes on each side or until the meat is cooked through (the internal temperature has reached 145 degrees).

Low Fat: Breakfast Pizza
Ingredients

1 (8-ounce) can reduced-fat refrigerated crescent dinner roll dough
Cooking spray
12 ounces turkey breakfast sausage
1 cup frozen shredded hash brown potatoes, thawed
1 cup (4 ounces) shredded fat-free cheddar cheese
1/4 cup fat-free milk
1/2 teaspoon salt
1/8 teaspoon black pepper
1 (8-ounce) carton egg substitute
2 tablespoons grated fresh Parmesan cheese
Preparation

Preheat oven to 375°.
Separate dough into triangles. Press triangles together to form a single round crust on a 12-inch pizza pan coated with cooking spray. Crimp edges of dough with fingers to form a rim.
Cook sausage in a large nonstick skillet over medium heat until browned, stirring to crumble. Drain.
Top prepared dough with sausage, potatoes, and cheese. Combine milk, salt, pepper, and egg substitute,stirring with a whisk. Carefully pour milk mixture over sausage mixture. Sprinkle with Parmesan. Bake at 375° for 25 minutes or until crust is browned.

Chicken bombs
5 boneless, skinless, chicken brea$ts
5 jalapeño peppers
20 strips of bacon
4 oz cream cheese, softened
1 cup grated colby jack or cheddar
cheese
salt and pepper to taste
1 cup BBQ sauce

Directions:

Slice chicken brea$ts in half WIDTH
wise (Each half will make 1 Chicken
bomb). Place between two pieces of
wax paper and pound to 1/4 inch
thickness. *A rolling pin also does the
trick. Season each with salt a pepper.
Slice jalapeños in half LENGTH wise
and remove seeds, ribs, and the end
with the stem.

In a small bowl, mix your softened
cream cheese with your grated colby
jack.

Fill each jalapeño half with about 1
Tbs cheese mixture. (Sometimes I use
more)

Place 1 jalapeño half at the end of
each pounded brea$t piece. Roll over
and together. *It doesn't always close
the way you think it should. No worries!
The bacon will pull it all together.

Wrap each brea$t piece with 2 slices
of bacon. I do 1 at a time (obviously),
and just sort of wrap tightly and tuck the
ends of the bacon under the strips. It all
comes together in the cooking process.
I promise you do not need toothpicks!

Preheat your grill to 350 degrees.
Cook over indirect heat for 20-25
minutes; turning every 4-5 minutes.
Baste chicken with BBQ sauce each time
you turn it. Giving it one final basting
right before it's done. Chicken is ready
when it reaches an internal temp of 165
degrees. If you don't have a meat
thermometer, pierce chicken with a
fork. If juices run clear, it's done!

*Makes 10 Chicken bombs
To Bake: Bake, uncovered, at 375
degrees for 30 minutes. Basting with
BBQ sauce a few times during cooking.
Baste once again when finished, and
place under broil setting for a few
minutes so bacon can crisp completely.

Incredible Baked Meatballs.

1 lb hamburger
2 eggs, beaten with 1/2 cup milk
1/2 cup grated Parmesan
1 cup panko or bread crumbs
1 small onion, minced
2 cloves garlic, minced
1/2 teaspoon oregano
1 teaspoon salt
freshly ground pepper to taste
1/4 cup minced fresh basil

Mix all ingredients with hands.
Form into golfball sized meatballs.
Bake at 350 degrees for 30 minutes.

Crispy Cheddar Chicken
2 lbs chicken tenders or 4 large chicken brea$ts
2 sleeves Ritz crackers
1/4 teaspoons salt
1/8 teaspoon pepper
1/2 cup whole milk
3 cups cheddar cheese, grated
1 teaspoon dried parsley

Sauce:
1 10 ounce can cream of chicken soup
2 tablespoon sour cream
2 tablespoon butter
Crush crackers. If using chicken brea$ts and not tenders, cut each chicken brea$t into 3 large pieces. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in.

Spray a 9×13 pan with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.

In a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.

2 cups prepared pancake batter
softened butter
maple syrup


These are the original instructions from a 1962 magazine ad for Aunt Jemima pancake mix:

"Just about the best breakfast that ever greeted a hungry family! And it's as easy as this: Shake up Aunt Jemima batter according to package directions. Place cooked bacon strips on the griddle and pour batter over each strip. Bake 'em golden brown on both sides.
