The repeating unit of the polymer is a tetrasaccharide, which consists of two residues of D-glucose and one of each residues of L-rhamnose and D-glucuronic acid. The tetrasacharide repeat has the following structure:
[D-Glc(β1→4)D-GlcA(β1→4)D-Glc(β1→4)L-Rha(α1→3)]n. As it is evident from the formula, the tetrasacharide units are connected by (α1→3) glycosidic bonds.

Gellan gum, also branded by few suppliers as AppliedGel, Phytagel or Gelrite, is used primarily as a gelling agent, alternative to agar, in microbiological culture. It is able to withstand 120 °C heat, making it especially useful in culturing thermophilic organisms. One needs only approximately half the amount of gellan gum as agar to reach an equivalent gel strength, though the exact texture and quality depends on the concentration of divalent cations present. Gellan gum is used as gelling agent in plant cell culture on Petri dishes, as it provides a very clear gel, facilitating light microscopical analyses of the cells and tissues. Although advertised as being inert, experiments with the moss Physcomitrella patens have shown that choice of the gelling agent - agar or Gelrite - does influence phytohormone sensitivity of the plant cell culture.[1]

As a food additive, gellan gum is used as a thickener, emulsifier, and stabilizer. It has E number E418. It was an integral part of the now defunct Orbitz soft drink.
It is used in soya milks to keep the soy protein suspended in the milk.[2]

The worldwide production amount of gelatin is about 300,000 tons per year (roughly 600 million lb).[citation needed] On a commercial scale, gelatin is made from by-products of the meat and leather industry. Recently, fish by-products have also been considered because they eliminate some of the religious obstacles surrounding gelatin consumption.[3] Gelatin is derived from pork skins, pork, horses, and cattle bones, or split cattle hides.[4] The raw materials are prepared by different curing, acid, and alkali processes which are employed to extract the dried collagen hydrolysate. These processes[5] may take up to several weeks, and differences in such processes have great effects on the properties of the final gelatin products.[6]
Gelatin can also be prepared in the home. Boiling certain cartilaginous cuts of meat or bones will result in gelatin being dissolved into the water. Depending on the concentration, the resulting broth (when cooled) will naturally form a jelly or gel. This process is used for aspic.
While there are many processes whereby collagen can be converted to gelatin, they all have several factors in common. The intermolecular and intramolecular bonds which stabilize insoluble collagen rendering it insoluble must be broken, and the hydrogen bonds which stabilize the collagen helix must also be broken.[2] The manufacturing processes of gelatin consists of three main stages:
Pretreatments to make the raw materials ready for the main extraction step and to remove impurities which may have negative effects on physio chemical properties of the final gelatin product,
The main extraction step, which is usually done with hot water or dilute acid solutions as a multi-stage extraction to hydrolyze collagen into gelatin, and finally,
The refining and recovering treatments including filtration, clarification, evaporation, sterilization, drying, rutting, grinding, and sifting to remove the water from the gelatin solution, to blend the gelatin extracted, and to obtain dried, blended and ground final product.

Now to the topic:
That might be the case.
But I don't have a guilty conscience considering the fact mankind is lavish with the resources.
You use every part of the animal and even make make money and generate jobs with it, how is that a bad thing (especially these days)?

Would you be ready to pay more for gummy candies (that don't taste different or even taste worse) ?
You wouldn't.
Could you find a more profitable way to use these leftovers? You wouldn't.
Does the average consumer care anyway? No he doesn't.
What would definitely happen to these leftovers if they weren't used to produce gelatine? They'd find a better way to deal with them? No. They'd simply throw them in the waste and burn them (especially if the company that exports these is located in a non-western country). And that process has its harmful effects too (let's also not forget the vapours and deases that it brings).

Now to the aspect of nutrition (let's block out the effects of the caloric value and the sugar for once, we know about that): So you tell me these gummy candies, especially their porc/animal ingredients would be significantly harmful, considering the sh*t that you eat everyday? You do know that these are peanuts compared to other contents that the average American ingests everyday?
Any effect would be minor because they aren't supposed to be eaten in great quantities.
